Prepare 2 pounds of king salmon, portioned into four pieces.

Make homemade maple teriyaki sauce: combine 1/4 cup soy sauce, 1/4 cup maple syrup, 1/4 cup water, 1 tablespoon sesame seed oil, 1 tablespoon rice vinegar, 1 tablespoon pureed ginger, and 5 to 6 pressed garlic cloves in a bowl and whisk together.

Pour the marinade over the salmon and refrigerate for 15 to 45 minutes to marinate.

Prepare mango avocado salsa: peel and finely dice 2 medium-sized mangoes, 2 medium-sized Roma tomatoes (scrape out seeds and juices), and 1 large avocado.

Add diced mango, tomatoes, avocado, chopped cilantro, and 1/2 cup diced red onion into a medium-sized mixing bowl. Set aside without mixing.

After marinating for about 30 minutes, remove salmon from the marinade and pat dry with paper towels.

Pour the marinade into a small saucepan and bring to a simmer over stovetop for 10 to 15 minutes until reduced.

Preheat a large frying pan over medium-high heat and drizzle in avocado oil until hot and slightly smoking.

Add the salmon skin side down to the hot pan and fry for 2 to 3 minutes until crispy, then turn every couple of minutes until golden brown all over, cooking the sides as well.

Once cooked, gently remove salmon from the pan and place it on a wire rack to rest for a couple of minutes.

Finish the salsa by squeezing in the juice of 2 limes, seasoning with salt, and adding 2 tablespoons of olive oil. Mix together.
