Sushi Pizza

2 cups cooked rice
1/2 cup sushi vinegar
1/2 cup panko
1 egg
1/2 flour
1 ripe avocado
450g sushi grade salmon
3 tbsp mayo
3 tbsp sriracha
1 green onion

Mix together cooked rice and sushi vinegar in a medium bowl, folding and slicing the rice while mixing. Set aside.

Slice avocado and salmon.

In a medium plate, beat egg and add flour, mixing together to create the batter for the rice patty.

Cover a salad plate with plastic wrap and spread sushi rice, pressing it hard to form a round shape. Cover with plastic wrap.

Remove the wrap and dip the round-shaped rice patty into the batter, covering it with panko.

Heat oil in a medium skillet over medium-high heat. Cook both sides of the rice patty until crisp and golden, about 3-4 minutes per side.

Transfer the sushi pizza to a plate, spread mayo-sriracha sauce, and top with avocado and salmon.

Add thinly sliced green onions on top and serve.
