Shiitake and Asparagus Risotto with Seared Salmon

Canned salmon is more affordable and still nutritious.
Add 1 liter of water to a pot and place salmon in a steamer coated with olive oil.
Once the water is boiling and steaming, place the steamer with salmon inside and steam for 10 minutes.
Remove the steamer after 10 minutes and reserve the water for later use.
Add butter to the salmon and shred it into pieces, seasoning with a pinch of salt.
Strain the salmon through a sieve to remove excess butter and place on a kitchen towel to crisp for 1.5 hours at 80 degrees Celsius.
Prepare vegetable stock by chopping carrots and onion, then adding them to the reserved salmon water along with chicken stock and simmer for over 30 minutes.
Strain the mixture to obtain a clear vegetable stock.
In a pan, add a tablespoon of butter and sauté minced garlic on low heat for 40 seconds.
Add curry powder to the garlic and sauté for color and flavor.
Add arborio rice directly to the pan without rinsing to maintain creaminess, and sauté for 3 minutes until fragrant.
Pour in dry white wine and reduce until almost fully evaporated, ensuring the rice is just covered with stock.
Maintain the stock at a hot temperature and add it gradually, stirring frequently until absorbed before adding more.
Once the rice is about 80% cooked, add stock and stir actively to ensure even cooking, seasoning with salt if needed.
When the risotto has a slight resistance, add grated parmesan cheese to enhance creaminess.
Finish by lowering the temperature to maximize the starch's viscosity and serve.
