Teriyaki Salmon

4 salmon fillets (6 oz each) fresh salmon fillet
1 tsp salt
1/2 cup soy sauce
1/4 cup sake
1/4 cup mirin
1/4 cup brown sugar
1 tbsp cornstarch
2 tbsp water
1 tbsp sesame oil

Sprinkle salt over salmon fillet on both sides.

Mix all the ingredients for the sauce in a bowl: soy sauce, sake, mirin, sugar, cornstarch, and water, and set aside.

Heat oil in a frying pan at medium heat.

Place salmon fillets in the pan and cook one side for about 3 minutes.

Turn over the salmon and cook the other side for another couple of minutes.

Pour the sauce mixture over the salmon and reduce until thickened.
