Teriyaki Salmon

1/2 cup soy sauce
1/4 cup rice vinegar
1/4 cup honey
1 tsp fresh ginger, grated
2 cloves garlic, minced
1 tbsp cornstarch
2 tbsp plain water
4 salmon fillets (6 oz each)

Make the teriyaki sauce by combining soy sauce, rice vinegar, honey, ginger, and garlic.

Prepare a slurry with cornstarch and plain water to thicken the sauce.

Cut the salmon into 1 1/2-inch cubes.
