Teriyaki Salmon

2 salmon fillets

a pinch of pepper
1 tablespoon potato starch or cornstarch
1.5 tablespoons soy sauce
1.5 tablespoons mirin
1.5 tablespoons sake
1 teaspoon sugar
1 tablespoon neutral oil (vegetable oil or canola oil)

Dry the salmon fillets with a paper towel to remove excess moisture.

Sprinkle the salmon with salt and pepper.

Coat the salmon fillets in potato starch or cornstarch.

In a small bowl, mix together soy sauce, mirin, sake, and sugar to create the teriyaki sauce.

Heat a pan on medium and add 1 tablespoon of neutral oil.

Once the oil is hot, place the salmon fillets in the pan with the skin facing down and cook for about 4 minutes until crispy.

Carefully flip the salmon over and cook for an additional 2 minutes on the other side.

Add the teriyaki sauce to the pan and continue to cook until the sauce thickens and becomes glossy, spooning it over the salmon as it cooks.
