While not authentic sushi, it showcases the creativity of Italian cuisine and has gained popularity in various Italian regions, often enjoyed as a fun appetizer or light meal.

Canned tuna is more affordable and still provides protein.
Start by melting butter in a large skillet.
Add sushi rice, garlic, and salt to the pan and let it cook for 2-3 minutes to toast.
Pour in 1 cup of white wine and increase the heat to medium.
Microwave vegetable stock and add it to the risotto mixture 1 cup at a time, allowing it to absorb before adding the next cup (3 cups total).
Once the risotto is ready, remove it from heat and stir in 1.5 cups of Parmesan cheese.
Spread the risotto on a baking sheet and refrigerate for 30 minutes to cool.
Cut mozzarella into thin slices.
Cut asparagus into pieces to fit into the sushi rolls.
Lay down prosciutto in a cross pattern on a sushi roller.
Spray fingertips with non-stick spray to prevent sticking while rolling.
Add 2 pieces of asparagus and mozzarella on top of the prosciutto.
Roll the sushi tightly and cut into pieces.
