700g ground pork
70g bean vermicelli
35 to 40g coriander
1 garlic clove
1 tsp ginger powder or grated fresh ginger
1 tsp fine salt
1/2 tsp sugar
1 tbsp fish sauce
1 tsp thai thin soy sauce
some instant coffee powder
some rice papers
1 tbsp sugar (for the sauce)
60ml boiled water
1/2 to 1 garlic clove (for the sauce)
1 dried red chili
1 tbsp fish sauce (for the sauce)
1 tsp lemon juice
a bit of carrot
1/8 tsp soy sauce

Soak the bean vermicelli in hot water until soft, then drain.

In a bowl, combine the ground pork, soaked bean vermicelli, coriander, minced garlic, ginger, salt, sugar, fish sauce, soy sauce, and instant coffee powder. Mix well.

Take a rice paper, dip it in warm water to soften, then place a portion of the pork mixture in the center and roll it up tightly.

Repeat the process until all the mixture is used up.

For the sauce, mix sugar with boiled water until dissolved, then add minced garlic, dried red chili, fish sauce, lemon juice, grated carrot, and soy sauce. Stir well.
