1 stock cube

Set aside a few slices of the veggies and peas for garnish/decoration.

Cut the chicken, carrots, and parsnips into chunks and boil them. Remove the parsnips earlier as they will boil quicker.

Separately, peel and cut potatoes into squares and boil them on their own.

In a deep dish/bowl, add the peas, sweetcorn, sliced olives, cubed gherkins, sliced peppers, and chopped parsley.

Once the chicken and veggies are boiled, cool them down, cut them into cubes, and add them to the bowl with the rest.

Add mayonnaise, salt, pepper, all-purpose seasoning, and chopped parsley. Mix well to incorporate everything.

Add a thin layer of mayonnaise on top, then add the saved veggies for garnish/decoration.

Chill in the fridge before serving.
