140 g plain flour
4 medium eggs
200 ml milk
A pinch of salt
Vegetable oil or beef dripping

Preheat the oven to 220°C (425°F).

Place a small amount of oil into each hole of a 12-cup muffin tray. Put the tray in the oven until the oil becomes very hot.

In a bowl, whisk the flour, eggs, milk, and salt together until you get a smooth, lump-free mixture. Let the batter rest for 10–15 minutes.

Carefully remove the hot tray from the oven. Quickly pour the batter into each hole, filling them about halfway.

Return the tray immediately to the oven.

Cook for 20–25 minutes without opening the oven door.
