1 cup (120 grams) all-purpose flour

300 milliliters milk
beef drippings or other fat (1 teaspoon per well)

In a medium bowl, add one cup of all-purpose flour and one teaspoon of salt, and whisk together.

In a large bowl, crack three eggs and add 300 milliliters of milk, whisk until smooth.

Gradually pour the milk and egg mixture into the flour mixture while whisking until smooth.

Chill the batter in the fridge for 10 minutes while preheating the oven to 425°F.

Add one teaspoon of beef drippings or other fat into each well of a muffin tin and place in the oven for about 10 minutes until hot.

Stir the chilled batter to mix, then scoop about a quarter cup of batter into each well of the hot muffin tin.

Bake in the oven for about 20 minutes until puffed and golden brown.

Remove from the oven and serve immediately.
