Yorkshire Pudding

175 grams whole milk

In a large bowl, combine 4 eggs, 150 grams of all-purpose flour, 175 grams of whole milk, a small pinch of salt, and 25 grams of water.

Let the batter rest for at least half an hour, or up to overnight (optional).

Preheat the oven to 450 degrees Fahrenheit.

In a small muffin mold, add a decent amount of bacon fat (or butter/olive oil) to each cup.

Place the muffin mold in the oven for about 10 minutes to heat the fat.

Remove the muffin mold from the oven and pour the batter into the hot fat, filling each cup about 3/4 of the way full.

Bake in the same 450 degree oven for about 15 minutes, or until they have popped up, browned, and sound hollow when tapped.
