1 cup all-purpose flour
1 cup milk
2 teaspoons dried rosemary
1 teaspoon sea salt
beef fat (for greasing the muffin tin)

Preheat the oven to 450 degrees Fahrenheit.

In a bowl with a spout, crack 4 eggs.

Add 1 cup of all-purpose flour to the eggs.

Pour in 1 cup of milk.

Add 2 teaspoons of dried rosemary (or 1 tablespoon of fresh rosemary if preferred).

Stir in 1 teaspoon of sea salt (or kosher/regular salt).

Mix the batter until smooth and free of lumps.

Set the batter aside and refrigerate it.

Grease a 12-cup muffin tin with about 1 to 1.5 teaspoons of beef fat in each cup.

Place the greased muffin tin in the oven until the fat is almost smoking.

Remove the muffin tin from the oven and quickly fill each cup halfway with the batter.

Return the muffin tin to the oven and bake for approximately 12 to 15 minutes.

After about 14.5 minutes, check the Yorkshire puddings; they should be done and starting to sink in the center.
