Prepare the dough by mixing flour, water, and salt until smooth.
Knead the dough for about 5 minutes until elastic, then let it rest for 30 minutes.
Peel and boil the potatoes until tender, then mash them in a bowl.
Sauté chopped onion in butter until translucent, about 3-4 minutes.
Combine the mashed potatoes, crumbled feta cheese, sautéed onion, egg, black pepper, and chopped parsley in a bowl.
Roll out the dough on a floured surface until thin.
Cut the dough into circles or squares, depending on your preference.
Place a spoonful of the filling in the center of each piece of dough.
Fold the dough over the filling and seal the edges by pressing with a fork.
Preheat the oven to 375°F (190°C).
Place the pies on a baking sheet lined with parchment paper.
Brush the tops with melted butter for a golden finish.
Bake for 25-30 minutes until golden brown and crispy.
Let cool slightly before serving.
