Put a pot of water on to boil.

Finely chop 1 spring onion, 1 chili, and 1 tablespoon of pickled ginger.

In a bowl, mix together 4 tablespoons of sweet chilli sauce, 2 teaspoons of sesame oil, 2 teaspoons of low salt soy sauce, juice of 2 limes, and 1 tablespoon of water.

Stir the sauce and set it aside.

Boil 100 grams of rice noodles until done, then drain and let cool.

Chop 75 grams of kale, removing the stalks, and finely chop it.

Peel and cut 1 carrot into battens.

Add 50 grams of bean sprouts to the mixing bowl.

Chop another tablespoon of ginger and add it to the bowl.

Cut 1 whole pomegranate in half and add the seeds to the bowl.

Tear 4 mint leaves and 4 coriander leaves and add them to the bowl.

Drizzle about 1 tablespoon of sesame oil over the mixture and mix everything together.

Dip rice paper in warm water for 10 seconds to soften it, then let it dry on kitchen roll.

Add a handful of the vegetable and noodle mixture to the rice paper, roll it up like a burrito.
