Preheat the oven to 400°F and place the po-boy bread in for about 5 minutes.

Melt 1 stick of butter in a 12-inch cast iron skillet over medium heat.

Add 2 cloves of chopped garlic and chopped green onions to the melted butter and sauté until browned.

Season 1 pound of Gulf shrimp with homemade Cajun seasoning and add to the skillet.

Cook the shrimp in the butter mixture, adding more Cajun seasoning to achieve a brownish-orange color.

While the shrimp are cooking, prepare the homemade remoulade sauce by mixing 3/4 cup mayonnaise, a heaping tablespoon of ketchup, and Crystal hot sauce to taste.

Once the shrimp are cooked, assemble the po-boy by opening the toasted bread and spreading a generous amount of remoulade sauce inside.

Add the cooked shrimp, followed by slices of tomato, lettuce, and a pinch of Cajun seasoning.
