70 grams cashew nuts (baked or roasted)

Season the prawns with half a teaspoon of salt and mix well.

Add half an egg white to the prawns and mix until coated.

Add 4 tablespoons of corn flour, mixing in half at first, then the rest, to create a thin batter.

Set the batter-coated prawns aside.

Prepare the sauce by mixing 140 milliliters of water, 1 tablespoon of oyster sauce, 3 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of brown sugar, and 1 tablespoon of rice vinegar or white vinegar. Stir well and set aside.

Heat oil in a pan over medium heat for shallow frying the prawns.

Test the oil temperature with a bit of batter; it should rise immediately when the oil is hot enough.

Carefully place the prawns in the hot oil, frying until golden brown, in batches if necessary.

Flip the prawns to ensure they are crispy on both sides and remove them from the oil once done.

Leave about 2 tablespoons of oil in the pan and add 5 grams of minced ginger, the white stems of 3 stalks of spring onions, and 1 small red onion cut into pieces. Stir them around.

Pour in the prepared sauce and bring it to a boil, stirring continuously to reduce it to a syrupy consistency.

Once the sauce is thickened and coats the back of a spoon, add the fried prawns, 70 grams of baked or roasted cashew nuts, and the remaining spring onions. Toss everything together.
