1

Pat the shrimp dry to ensure they get nice color when cooked.

2

Heat a pan over medium-high heat that is oven or broiler safe.

3

Add 3-4 tablespoons of olive oil to the pan.

4

Cook the shrimp for about 30-40 seconds on each side until they get a little color, seasoning with salt and pepper while cooking.

5

Remove the shrimp from the pan and place them on a plate after cooking.

6

Continue cooking the remaining shrimp in batches, ensuring not to overcrowd the pan.

7

Once all the shrimp are cooked, remove the pan from heat to prevent the oil from burning.

8

Finely chop half of a medium onion and add it to the pan.

9

Season the onion with a pinch of salt and add 2 tablespoons more olive oil if needed.

10

Cook the onions over medium heat for about 7-8 minutes until soft and golden.

11

Add 1 teaspoon of grated garlic to the onions and cook for a few seconds until fragrant.

12

Remove the pan from heat and add a 15-ounce can of pureed tomatoes, seasoning with salt, pepper, and a pinch of sugar.

13

Return the pan to heat and cover it with a lid, cooking for about 5-6 minutes until the sauce thickens.

14

Once thickened, taste the sauce and add 1 teaspoon of oregano and 4 sliced scallions.

15

Return the cooked shrimp to the sauce and mix everything together, then turn off the heat.

16

Add 3-4 ounces of feta cheese in chunks to the mixture and remove from heat.

17

Set the broiler to high and place the pan in the oven, about 4-5 inches from the heating element, for about 4-5 minutes until the sauce bubbles and the cheese melts.

18

Remove from the oven after about 7 minutes, checking to ensure the shrimp are not overcooked.

19

Serve with toasted bread and boiled fettuccine, garnished with freshly chopped parsley and lemon wedges.
