Slow Roast Lamb

Season the half leg of lamb with olive oil.
Sear the lamb on all sides in a skillet until browned.
Place the lamb on a plate and set aside.
Add unpeeled onions and carrots to the skillet for flavor.
Pour in red wine and place the lamb on top of the vegetables.
Cover and roast in the oven for 3 hours.
Prepare the side dish by heating butter and olive oil in a pan.
Add a teaspoon of flour and stir in chicken stock gradually.
Add frozen peas and chopped spring onions to the mixture.
Cover and cook for about 5 minutes.
Make the red currant sauce by combining red currant jelly and red wine vinegar in a small saucepan.
Season with salt and pepper, and let it cook for 5 minutes.
