Sancocho Recipe | Authentic Puerto Rican Stew with Meats & Root Vegetables

Wash all meats with vinegar the night before.

Peel the root vegetables: yellow sweet potatoes, malanga, yam, yautía, and white potatoes.

Prepare the green plantain and green bananas for cooking.

Chop the carrots and bell peppers (red and yellow).

In a large pot, bring water to a boil.

Add the beef ribs, chicken, and ham to the boiling water.

Add the chopped vegetables and the green plantains to the pot.

In a separate bowl, mix garlic powder, sofrito, green olives, chicken bouillon powder, and sazón.

Add the mixed ingredients to the pot and stir well.

Let the sancocho simmer until the flavors meld and the broth thickens.
