In a large pot, combine the pork short ribs, beef chuck, and boneless chicken thighs. Season with smashed garlic cloves, dominican oregano, soy sauce, sofrito, sazón complete, garlic powder, cumin, adobo, salt, and pepper.

Add the root veggies: yuca, green banana, plantain, auyama, yautia, and corn to the pot.

Pour in enough water to cover the ingredients and bring to a boil.

Once boiling, reduce heat and let it simmer until the meats and veggies are tender.

In the last few minutes of cooking, add the red pepper, red onion, shallot, cilantro, culantro, chicken bouillon, garlic powder, and lime juice to the pot.

Taste and adjust seasoning if necessary before serving.
