Prepare the caramel by placing 1 cup of sugar in a saucepan over low heat, stirring constantly to prevent burning.

Once the sugar melts and turns golden brown, carefully pour it into a 22 cm round baking dish, tilting to coat the bottom and sides evenly.

In a blender, combine 1 liter of milk, 5 eggs, 350 grams of sugar, 50 milliliters of rum, and vanilla essence.

Blend all the ingredients for about 3 minutes until smooth.

Pour the mixture into the baking dish over the caramel.

To cook the quesillo, you can use two methods:

1. For the first method, place the baking dish in a larger pot with water (not exceeding the height of the baking dish) and cover it with aluminum foil. Heat the pot on medium until the water boils, then reduce to low heat and cook for about 1.5 hours.

2. For the second method, place the baking dish in a larger baking pan filled with water and cover the baking dish with aluminum foil. Bake in the oven at 200°C for about 1.5 hours.

Check for doneness by inserting a toothpick in the center; it should come out clean when the quesillo is ready.

Let the quesillo cool to room temperature, then refrigerate for at least 8 hours before serving.
