1

Incorporate 200 g of sugar into a 24 cm mold.

2

Heat the stove on low and mix the sugar carefully until it reaches a thick caramel color.

3

Remove from heat and coat the edges of the mold with the caramel.

4

In a separate bowl, crack 10 eggs one by one into a small container before adding them to a larger bowl.

5

Add the 10 eggs to a blender along with 300 g of condensed milk and blend on high for about 2-3 minutes until well combined.

6

In a large bowl, mix 600 ml of room temperature water with 300 g of milk powder using a whisk until there are no lumps.

7

Add 200 g of sugar to the milk mixture and mix until the sugar is dissolved.

8

Add a splash of rum and vanilla to the mixture.

9

Combine the egg and condensed milk mixture with the milk mixture and mix well.

10

Strain the combined mixture through a sieve to ensure a smooth texture.

11

Cover the mold with a lid or aluminum foil to make it airtight.

12

Place a large pot on the stove with plenty of water and a steaming rack inside.

13

Put the mold on the steaming rack, cover the pot, and cook on high for 1.5 hours.

14

After 90 minutes, check if the quesillo is cooked by inserting a knife in the center; it should come out clean.

15

Let the quesillo cool completely, then refrigerate for about 5 hours or overnight.

16

To serve, run a knife around the edges of the mold, place a flat plate on top, and flip it over.
