Gluten-free Garlic Prawn Pasta

Originating from coastal regions of Italy, garlic prawn pasta showcases the fresh flavors of the sea, often enjoyed in family gatherings. The dish celebrates simple yet vibrant ingredients, with garlic and olive oil forming the base of its rich flavor. Today, gluten-free variations allow more people to enjoy this classic, making it a popular choice for both casual dinners and special occasions.

Nutritional yeast adds a cheesy flavor with fewer calories.
Boil salted water in a pot and add 350 grams of gluten-free pasta; stir to ensure all pasta is submerged.
Cook the pasta, being careful not to overcook it; it should be slightly al dente.
In a separate pan, heat a touch of olive oil over medium heat.
Add prawns to the pan along with minced garlic, fresh coriander, and fresh chili (including seeds) for a kick.
Add a few chopped spring onions, saving some for garnish.
Cook the prawns until they are just done; do not overcook them.
Once the pasta is cooked, drain it and add it to the prawn mixture in the pan.
Finish the dish with a drizzle of olive oil and a squeeze of lemon juice for tang and zing.
Garnish with reserved spring onions and fresh coriander before serving.
