500g Rohu fish (or any white fish)
2 cups water
2 medium potatoes, cubed
1 medium tomato, chopped
1 medium onion, sliced
2 green chilies, slit
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin seeds
2 tbsp mustard oil
Salt to taste
Fresh coriander leaves for garnish

Heat mustard oil in a pan until it smokes slightly.

Add cumin seeds and let them splutter.

Add sliced onions and sauté until golden brown.

Stir in ginger and garlic paste, and cook for 2 minutes.

Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes soften.

Add cubed potatoes and mix well. Cook for 5 minutes, stirring occasionally.

Pour in water and bring to a boil. Reduce heat and let it simmer until potatoes are tender.

Gently add the fish pieces and green chilies. Cook for another 10 minutes until the fish is cooked through.

Garnish with fresh coriander leaves before serving.
