Futoo/Thieré with Lamb Stew and Meatballs

Futoo, also known as Thieré, is a traditional dish from Mali, often enjoyed during communal gatherings and celebrations. This hearty meal showcases the rich flavors of West African cuisine, combining tender lamb with a variety of vegetables and spices. The dish is typically served with rice flour balls, which are a staple in the region. In modern times, variations have emerged, adapting to local ingredients and dietary preferences, making it a beloved dish beyond its origins.

Vegetable or bean options are lower in fat and cost.
Rinse lamb meat quickly to clean it.
Add vegetable oil to a large pot and heat until hot.
Add salt to the hot oil, then add the lamb meat.
Cook the lamb until it has a nice brown color, then remove and set aside.
Prepare chicken drumsticks by stuffing them with a mixture of garlic salt, pepper, jumbo cubes, and chili powder.
Poke a hole in each drumstick down to the bone and stuff it with the mixture, ensuring it's secure.
Fry the stuffed drumsticks in the same pot until the bottom side is brown, then flip to brown the other side.
Remove the drumsticks once both sides are golden and set aside.
Prepare the onion sauce by chopping onions, garlic, bell pepper, and abanero pepper, then blend them together.
Add the blended onion mixture to hot oil in the pot.
Add water to the pot before adding tomato paste to soften it.
Add various chopped vegetables (eggplant, cabbage, green onions, carrots, sweet potato, potato, cucumbers) to the pot.
Use a rubber band to keep the green onions together while cooking.
Add the lamb meat and chicken drumsticks back into the pot once the vegetables are halfway done.
Clean the cherry by adding warm water and quickly rinsing it to remove the ingredient called L.
Soak the cherry in water for at least 30 minutes.
Microwave half of the cherry for 20 minutes until very soft, then set aside and microwave the other half.
Transfer the cooked cherry into a large container.
Soften raisins by adding some broth from the pot and letting them sit for 5 minutes.
Add canned red beans and white beans to the cherry for color.
Add sugar to the mixture to elevate the flavors.
Rinse the beans with cold water before adding them to the cherry.
Add enough broth from the pot to coat the cherry without adding oil.
Check the vegetables for tenderness by poking them with a knife and remove them from the pot once done.
Remove the cooked drumsticks and let them cool.
Let the lamb cook a little longer if needed.
Add one small jumbo cube for final seasoning to the pot.
Serve the cherry in medium bowls, with sauce in a separate bowl.
