2 lbs goat meat, cut into chunks
2 tbsp vegetable oil
1 large onion, chopped
4 cloves garlic, minced
2 medium tomatoes, chopped
1 bell pepper, chopped
1/2 cup cilantro, chopped
1 tsp cumin
1 tsp paprika
1/2 tsp black pepper
1/2 tsp salt
2 cups beef broth
1/2 cup beer (optional)
1 bay leaf
1-2 green chilies, chopped (optional)

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion and garlic, sauté until the onion is translucent.

Add the goat meat to the pot, browning it on all sides.

Stir in the chopped tomatoes, bell pepper, cilantro, cumin, paprika, black pepper, and salt.

Pour in the beef broth and beer (if using), and add the bay leaf.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.
