Clean and wash the goat meat, then drain excess water.
Wash 6 cups of rice three times until the water is clear.
Chop up the seasoning ingredients: onion, curry leaves, garlic, hot peppers, and other herbs.
Season the goat meat with curry powder, black pepper, thyme, garlic, onion, oregano, scallions, pimento peppers, and scotch bonnet pepper.
Add chicken bouillon, mustard, and mushroom soy sauce to the goat meat for flavor.
Let the goat marinate for a while.
Prepare a wood fire outside for cooking.
Once the fire is ready, heat oil in a pot over the fire.
Add the marinated goat meat to the pot and brown it.
Add the chopped seasoning mix to the pot and sauté until fragrant.
Stir in the rice and cook for a few minutes to coat with oil and spices.
Pour in coconut milk and enough water to cover the rice by about an inch.
Add bay leaves and pigeon peas, then bring to a boil.
Reduce heat, cover, and simmer until rice is tender and liquid is absorbed.
