6 small cardamom

Grind 10 cloves, 2 small cardamom, and 1 tablespoon ghee in a grinder to make garam masala and set it aside.

In a bowl, mix 1 tablespoon saffron with 2 tablespoons warm milk and set aside.

Marinate 1 kg of beef with 1 tablespoon red chili powder and 1 tablespoon salt, then let it sit for 2 hours.

In a large pot, add 1 tablespoon ground garam masala, 1 tablespoon ginger paste, and fry 4 medium-sized sliced onions until golden brown, then mash and add half of them back to the pot.

Add 1 cup yogurt, 1 cup chopped mint, 1 cup chopped coriander, and 5 chopped green chilies to the beef and mix well.

Add 1 cup water and mix again, then let it marinate for another hour.

Boil water in a separate pot and add 1 teaspoon cumin seeds, 6 small cardamom, and 6 tablespoons salt.

Add the soaked basmati rice to the boiling water and cook until half done, then drain.

Layer the partially cooked rice over the marinated beef in the pot.

Add the remaining rice on top, sprinkle the remaining garam masala, some mint, coriander, and green chilies, and drizzle the saffron milk mixture over it.

Cover the pot tightly and cook on high heat for 10 minutes, then reduce to low heat for another 10 minutes.

Let it rest for 5 minutes before mixing the layers gently.
