Pour 6-7 tbsp of olive oil into a pressure pot.

Chop and add 2 medium onions, cooking for 2-3 minutes until sautéed.

Add beef on top of the onions and cook for 2-3 minutes until browned.

Chop and add 2 medium garlic cloves, along with 1 tbsp of salt, and sauté until the beef is no longer red.

Add 2.5 cups of water to the pot and close it, cooking for 10 minutes in the pressure pot (or 30-40 minutes in a regular pot).

Remove the beef and set it aside.

Cut 3 medium carrots and add 4-5 tbsp of olive oil in a frying pan, cooking the carrots for 2-3 minutes.

Add 1 tbsp of sugar to the cooked carrots and mix well, then set aside.

In a medium pot, boil water and add 1 tbsp of salt, then add the rice.

Bring the water back to a boil and cook the rice for 5-6 minutes to remove excess starch.

Drain the rice and sprinkle a little cold water on top to prevent sticking.

Return the rice to the pot and add 0.5 tbsp of ground cumin and 2-3 pinches of cinnamon, mixing well.

Add 3 big spoons of olive oil to the rice and mix again.

Pour the beef broth into the rice and mix well.

Add the cooked beef on top of the rice, then layer with 1 cup of rinsed red raisins and the cooked carrots, covering with more rice.

Cover the pot with foil and then tightly with a lid, preheat the oven to 400-405°F.

Bake in the oven for 5 minutes at 405°F, then reduce to 350°F and bake for 40 minutes.

Remove the foil and mix the rice with the raisins, carrots, and beef before plating.
