Heat mustard oil in a pot and add bay leaves, cinnamon stick, black cardamom, cumin seeds, mace, black peppercorns, green cardamom, and cloves to temper the spices.

Add sliced onions and sauté until they turn golden brown.

Stir in the ginger garlic paste and cook until the raw smell disappears.

Add the meat and cook until it is browned on all sides.

Incorporate the turmeric powder, red chilli powder, Kashmiri red chilli powder, and coriander powder, and mix well.

Add chopped tomatoes and cook until they soften.

Add the bottle gourd pieces and mix well with the meat and spices.

Pour in enough water to cover the ingredients and bring to a boil.

Reduce the heat and let it simmer until the meat is tender and the bottle gourd is cooked through.

Add salt, garam masala powder, and chopped green chillies, and cook for a few more minutes.

Garnish with coriander leaves before serving.
