1/2 cup Desi Ghee

1 cup Sugar
1 cup Water (for syrup)

Mix 2 cups of All Purpose Flour with 1/2 cup of Desi Ghee.

Add Water in batches to make a tight dough.

Add 1 tbsp of Ghee and knead the dough.

Coat the dough with a little Ghee and let it rest for 10 minutes.

Divide the rested dough into equal portions and roll them into small discs.

Poke the discs with a fork to prevent puffing during frying.

For moon-shaped Mathri, roll two discs together and cut out the middle using a cookie cutter.

Heat oil in a pan and check if it's ready by dropping a portion of dough in it.

Fry the Mathris on low flame until they turn golden, flipping them once.

For sweet Mathri, simmer 1 cup of Sugar and 1 cup of Water until it thickens into a syrup.

Slide the fried Mathris into the sugar syrup for coating.
