1

In a large bowl, add 2 cups of whole wheat flour and 0.5 cup of besan.

2

Add 3-4 tablespoons of kasuri methi, salt to taste, 1/4 teaspoon of asafoetida, 1 teaspoon of caraway seeds, 2 tablespoons of white sesame seeds, 1/4 teaspoon of turmeric powder, and 1 teaspoon of red chili powder to the flour mixture.

3

Mix all the dry ingredients thoroughly until well combined.

4

Add 4-5 tablespoons of oil to the mixture and rub it in until it resembles breadcrumbs.

5

Gradually add water while kneading to form a smooth dough.

6

Cover the dough with a damp cloth and let it rest for 15-20 minutes.

7

Preheat the oven to 150°C (about 300°F).

8

After resting, knead the dough again briefly.

9

Divide the dough into portions and roll each portion on a floured surface to about 1/4 inch thickness.

10

Cut the rolled dough into square shapes using a knife.

11

Prick the squares with a fork to prevent puffing during baking.

12

Line a baking tray with parchment paper and brush it lightly with oil.

13

Transfer the cut pieces onto the baking tray and brush a little oil on top to prevent them from drying out.

14

Bake in the preheated oven for 10 minutes, then flip the pieces and bake for another 10 minutes.

15

Increase the temperature to 180°C (about 356°F) and bake for an additional 3 minutes until golden brown.

16

Let the mathris cool completely before serving.
