Methi Mathri is a traditional Indian snack, often enjoyed with tea or as a festive treat. Originating from North India, these crispy crackers are made with fenugreek leaves (methi), which add a distinctive flavor. Traditionally deep-fried, this baked version offers a healthier alternative while retaining the beloved taste. Methi Mathri is commonly served during festivals and special occasions, making it a popular choice for gatherings and celebrations.

Preheat the oven to 350°F (175°C).
In a large bowl, combine whole wheat flour, semolina, and salt.
Add caraway seeds, cumin seeds, black pepper, turmeric powder, and red chili powder to the flour mixture.
Mix in the chopped methi leaves until evenly distributed.
Drizzle in oil and rub it into the flour mixture until it resembles breadcrumbs.
Gradually add water, kneading to form a smooth dough.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Divide the dough into small balls and roll each ball into a thin circle.
Place the rolled mathris on a baking sheet lined with parchment paper.
Sprinkle sesame seeds on top of each mathri and gently press them in.
Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
Remove from the oven and let cool on a wire rack before serving.
