Khasta Masala Mathri is a popular Indian snack, often enjoyed during festivals and special occasions. Originating from North India, these flaky, spiced crackers are perfect for tea time or as a crunchy accompaniment to meals. Traditionally made with a blend of spices and fried to perfection, they have become a beloved snack across the country, with many families passing down their unique recipes. Today, variations abound, with some adding different spices or herbs, but the essence of this crispy treat remains cherished.

Fennel seeds can provide a similar flavor profile.
Take 1 cup of all-purpose flour in a bowl.
Add 1/4 tsp salt, 1/4 tsp caraway seeds, and 1 pinch of baking soda to the flour.
Add 25 grams of oil to the mixture.
Mix all ingredients nicely.
Gradually add water while kneading to form a hard dough, adding little water at a time.
Knead the dough for 4-5 minutes until it gets soft.
Cover the dough and let it rest for 20 minutes for fermenting.
After 20 minutes, knead the dough again.
Divide the dough into small parts and roll them into balls.
Roll each ball into a thick disc for mathri.
Prick the mathri on both sides with a knife to prevent puffing.
Heat oil in a pan over medium-low flame.
Gently place the mathri in the hot oil for frying.
Fry the mathri on medium-low flame, flipping sides until they turn golden brown, about 6-7 minutes.
Remove the fried mathri from the oil and drain on paper towels.
