Traditionally, it symbolizes hospitality and is a staple at weddings and festive occasions. Each family may have its own variation, with ingredients reflecting local tastes and available resources. Today, Plov is enjoyed not only in Kyrgyzstan but across the region, with each country adding its unique twist to this hearty rice dish.

Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in diced lamb and cook until browned on all sides, about 7-10 minutes.
Add grated carrots and cook for another 5 minutes until softened.
Mix in minced garlic, cumin, and black pepper, cooking for 2 minutes until fragrant.
Add rinsed rice, stirring to coat with the mixture for 2-3 minutes.
Pour in water, ensuring it covers the rice by about an inch.
Add bay leaves, salt, and dried fruits, stirring gently to combine.
Bring to a boil, then reduce heat to low and cover the pot.
Cook for 20-25 minutes until rice is tender and water is absorbed.
Remove from heat and let sit, covered, for 10 minutes.
Fluff the rice with a fork and garnish with chopped parsley and red pepper before serving.
