Mauritian Style Sauteed Lamb

Cut carrots into juliennes and slice onions.
Boil the carrots in water for around 5 minutes to soften them.
Remove excess water from the boiled carrots.
Add oil to the pan and then add the sliced onions, cooking until they are not caramelized.
Boil lamb in a pressure cooker for around 20 to 25 minutes on high flame until soft, then add to the pan.
Stir the mixture well.
Add soy sauce and optional oyster sauce for flavor and color, then add salt and stir again.
Finally, add small bell peppers to keep them crunchy, stirring gently.
