Introduce the dish and its context.
Gather ingredients: 2 eggs, 8 tablespoons breadcrumbs, 4 tablespoons mayonnaise, 1-2 tablespoons milk, 3 tablespoons sambal oelek, 2 teaspoons freshly grated nutmeg, salt, pepper, and 1 kilo of ground beef.
Put the ground beef in a large bowl for mixing.
Grate nutmeg to measure approximately 2 teaspoons.
Add sambal oelek, mayonnaise, breadcrumbs, salt, and pepper to the beef.
Put on gloves and mix the ingredients thoroughly to ensure even distribution.
Cover the mixture with plastic wrap and refrigerate for about an hour.
After an hour, take out the beef mixture and puff pastry sheet (approximately 10 inches by 15 inches).
Cut the puff pastry into 5 by 5 inch squares, yielding six squares from one sheet.
Scoop out a portion of the beef mixture and shape it into a log that matches the width of the pastry square.
Place the beef log about a third of the way up from the bottom of the pastry square.
Wet the edge of the pastry with cold water to help seal it when folded over.
Fold the pastry over the beef log and crimp the edges with a fork to seal.
Place the sausage rolls on a cookie sheet and refrigerate for 10-15 minutes to rest the dough.
Prepare the egg wash by whisking together 2 eggs, 1.5 tablespoons of milk, and a pinch of salt.
Brush the egg wash over the tops of the sausage rolls.
Bake in the oven for 15-20 minutes, turning them halfway through for even browning.
Check that the meat is fully cooked, especially if using a pork and beef mixture, by using a meat thermometer if necessary.
Remove from the oven when golden brown and crispy, and let cool slightly before serving.
