1 lb pork belly

2 cups avocado oil
2 tablespoons seasonings (barbecue, chili, lime, salt and vinegar)

Obtain pork skin with all fat removed from Asian or Mexican markets, or use pork belly with skin on.

Use sharp kitchen shears to cut along the skin of the pork belly, removing the skin carefully.

Cut the pork skin into smaller bite-sized pieces using kitchen scissors or a sharp knife, varying the sizes.

In a large pot of water, add a few teaspoons of salt and the pork skins.

Boil the pork skins for about 30 minutes, stirring occasionally to help break down collagen and melt off fat.

Strain the water from the pork skins and allow them to cool enough to handle.

Scrape off any remaining fat from the boiled pork skins using a knife, being careful not to remove all the fat as some can add flavor.
