½ teaspoon Kashmiri red chili powder

Wash 1 kg of mutton thoroughly and set aside.

Heat a kadai (wok) on the gas stove until hot.

Add 5 tablespoons of mustard oil to the hot kadai.

Sauté the mutton on high flame for 4-5 minutes until the color changes.

Add whole spices: 1 large cardamom, 3 small cardamoms, 8-10 black peppercorns, 6-7 cloves, 1 inch cinnamon stick, ½ teaspoon cumin seeds, 1 star anise, and 4 dried red chilies.

Mix the spices well and sauté on high flame for 2-3 minutes.

Add 1.5 teaspoons of crushed garlic and mix well, sautéing on high flame for 3-4 minutes.

Add 2 medium-sized finely chopped tomatoes and mix well.

Cook on medium to low flame for 4-5 minutes until the tomatoes are soft.

Add ½ teaspoon turmeric powder and 1.5 teaspoons cumin powder, mixing well.

Sauté on medium flame for 2-3 minutes, stirring occasionally.

Add 4 medium-sized sliced onions and 1.5 teaspoons of salt, mixing well.

Cook on medium flame for 10-12 minutes, covered, stirring occasionally.

Once the onions are soft, add 1 teaspoon coriander powder, 1 teaspoon red chili powder, 1 teaspoon meat masala powder, and ½ teaspoon Kashmiri red chili powder, mixing well.

Sauté on low flame for 10-15 minutes, stirring occasionally, without covering.

Add 1 cup of water for gravy, adjusting according to preference.

Mix well and cover, cooking for 10-12 minutes or until the mutton is soft.

Once the mutton is soft, turn off the gas flame and add chopped fresh cilantro, mixing well.
