Roasted Chickpeas

2 jars of chickpeas
1 to 2 tablespoons avocado oil
salt to taste
pepper to taste

Open jars or cans of chickpeas and rinse them under cold water.

Drain the chickpeas well and lay them out on a dishcloth or paper towel to dry completely.

Once dry, add 1 to 2 tablespoons of avocado oil to the chickpeas and stir to coat them evenly.

Spread the chickpeas out on a cookie sheet lined with parchment paper, ensuring they are not crowded.

Season the chickpeas with salt and pepper to taste before roasting.

Preheat the oven to 385°F and roast the chickpeas for 35 minutes.

After 35 minutes, stir the chickpeas and continue roasting, checking every 2 to 3 minutes until they reach desired crispiness.

Once crispy, turn off the oven and leave the chickpeas inside with the door slightly open for 5 to 10 minutes to cool down slowly.
