Roasted Chickpeas

15 ounce can of garbanzo beans
1 tablespoon olive oil
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper

Open the can of garbanzo beans and drain it in the sink.

Rinse the chickpeas to wash off the salt.

Dry the chickpeas thoroughly using a clean towel or paper towels.

In a bowl, add 1 tablespoon of olive oil, 1/2 teaspoon of dried thyme, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper.

Zest a lemon using a zester or cheese grater, being careful not to get into the white part of the lemon.

Add 1.5 teaspoons of lemon zest to the mixture in the bowl and mix well.

Add the dried chickpeas to the bowl and coat them with the spice mixture.

Spread the chickpeas out on a cookie sheet.

Preheat the oven to 400 degrees Fahrenheit.

Roast the chickpeas in the oven for about 35 to 40 minutes.
