2 cups carrots
1 cup black raisins
1/2 cup slivered almonds
2 tablespoons olive oil
2 teaspoons sugar

Brown 4 cups of finely diced onions in 1/2 cup of olive oil for around 15 minutes.

Add 10 pieces of thigh and drumstick (around 2 and 1/2 pounds) to the browned onions and mix well.

Add 5 teaspoons of salt and 2 tablespoons of Kitchen Bouquet to the chicken and onions, cover, and let cook for around 5 minutes.

Prepare 12-14 cups of boiling water for the rice, ensuring it is 2-3 inches above the rice when added.

Rinse 3 cups of long grain basmati rice three times to remove starch.

Add the rinsed rice to the boiling water and boil for 3-4 minutes until al dente.

Prepare a pouch with 2 cups of carrots and 1 cup of black raisins using aluminum foil.

Remove the chicken from the pot to allow the sauce to thicken.

Add the boiled rice to the sauce with the spices (2 teaspoons cumin, 1 and 1/2 teaspoons ground cardamom, and 1/2 teaspoon black pepper) and stir well.

Arrange the chicken on top of the rice in the pot and place the pouch with carrots and raisins inside.

Bake in a preheated oven at 500°F for 10 minutes, then reduce the temperature to 250°F and bake for an additional 20 minutes.
