Remove pin bones from the salmon fillets, which is optional but recommended for a boneless dish.

Prepare the teriyaki sauce by mixing 100 ml of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of mirin, 2 tablespoons of sake, and 30 g of sugar in a bowl.

Grate garlic and ginger into the sauce mixture according to taste; ginger is optional.
