Cultural Context
Uyghur Lamb Rice Pilaf, or Polu, is a traditional dish from the Uyghur people of China, particularly Xinjiang. This hearty meal reflects the region's nomadic heritage, combining flavorful lamb with fragrant rice and vegetables. Often served during special occasions and family gatherings, it embodies hospitality and communal dining. Today, variations of this dish can be found across Central Asia, each with unique local ingredients and spices, showcasing its adaptability and enduring popularity.

Wash and clean the rice, then soak it in water for 30 minutes.
Slice 2-3 garlic cloves.
Use 1/2 red onion and 1/2 white onion, or just a red onion, cut into thicker strips.
Cut 1/2 carrot into pieces the length and half the width of your little finger.
Optionally add 1 spicy pepper for heat.
Use lamb ribs or lamb leg, separating fat, lean meat, and bone.
Render lamb fat in a pan over medium heat for about 5 minutes, then remove it from the pan.
Add onions, garlic, and pepper to the pan, cooking for about 5-6 minutes until caramelized.
Push vegetables to the edge of the pan and add lamb meat in the center, cooking undisturbed for 2-3 minutes.
Stir fry the lamb meat with the vegetables for about 8-10 minutes to cook off moisture.
Add water just above the meat and vegetables, ensuring they are fully submerged.
Skim off impurities from the surface during the first few minutes of boiling.
Add 5-6 pieces of rock sugar (or substitute white sugar) and 1/2 carrot, along with 2-3 bay leaves, then cover and cook for 8 minutes.
Optionally add cumin powder and salt to taste after 8 minutes.
Pour pre-soaked rice into the pan, stirring evenly around the lamb and vegetables.
Flatten the rice to ensure it settles into a uniform layer just beneath the surface of the broth.
Scatter a generous handful of golden and red raisins over the rice.
Poke several holes deep into the rice with a fork or chopsticks to create steam channels.
Reduce heat to medium-low, cover tightly, and let it braise for 5 minutes.
