Roasted Leg of Lamb Bulgarian Style

Today, variations can be found across the Balkans, each adding unique regional flavors and techniques, making it a beloved meal in many households.

Take the leg of lamb out of the fridge 30 minutes to an hour before cooking.
Make slits on both sides of the lamb.
Season the lamb generously with kosher salt and black pepper, inserting it into the slits.
Turn on the broiler and sear the lamb for 5 to 7 minutes on each side.
Prepare a wet rub with garlic cloves, dried oregano, dried mint, sweet paprika, nutmeg, juice of 2 lemons, and extra virgin olive oil in a food processor.
Rub the mixture all over the lamb, inserting more garlic into the crevices if desired.
Add a little water to the pan, cover it, and place it in the oven at 325°F for 2 to 3 hours.
Cut potatoes and onions into wedges, season with kosher salt, black pepper, garlic powder, sweet Spanish paprika, and drizzle with extra virgin olive oil.
Add the seasoned veggies around the lamb in the oven when the lamb has about one hour left to cook.
Let the lamb rest after cooking before serving.
