List ingredients quickly: all-purpose flour, baking powder, Creole seasoning, ground ginger, fresh garlic, cooked crawfish tail meat (12 ounces), green onion, salt, dried parsley, water, and hot pepper sauce (Frank's brand).
Prepare a dipping sauce using mayonnaise, celery, onions, olive oil, deli style mustard with horseradish, lemon juice (from half a lemon), paprika, and hot pepper sauce.
Combine all sauce ingredients in a food processor and pulse for about 30 seconds until mixed; taste to ensure flavor is good.
Refrigerate the sauce and add hot pepper sauce to taste off-camera.
Combine flour, baking powder, Creole seasoning, ground ginger, grated garlic, crawfish meat, green onion, dried parsley, a few drops of hot pepper sauce, and salt in a bowl.
Add water gradually to the mixture until it reaches a consistency suitable for forming patties; taste for seasoning.
Heat oil in a deep pot to 350°F (175°C) and use an ice cream scoop to drop fritter mixture into the hot oil.
Fry until golden brown and floating, then remove from oil and drain on paper towels.
Show the finished crawfish beignets, breaking one open to reveal the inside, and serve with the prepared remoulade sauce.
