75 g plain flour
1 lbs boneless leg of lamb
1 tsp sugar
1 tsp instant yeast
1 tsp plain yoghurt
2/3 tsp olive oil
1 tsp red chillie powder
1 green chillie
1/2 tsp garlic powder
Salt to taste
1 tsp cumin seeds
1 small onion finely chopped
1 tsp chillie flakes
Fresh coriander or parsley
1 tsp sesame seeds (optional)

Add yeast and sugar in 100 ml lukewarm water and let it rest for 5 minutes.

Sieve flour to form a dough, adding sugar and yeast water gradually.

Knead for 10-11 minutes or until it's tacky but not sticky to touch, cover and leave to rest for two hours in a warm place.

Season meat with all the ingredients and mix well.

Add 1 tsp olive oil in a pan, add meat and cook for 5 minutes or until fully browned.

Add 100 ml water and bring to a boil, cover the pot and let it simmer on medium-low heat for 30-35 minutes or until meat turns soft and all the water evaporates, then turn off the fire and let the meat cool down.

Add chopped onions, coriander, and chillie flakes to the meat mixture.

Cut dough into equal portions, make a round ball, and roll the dough either using a rolling pin or just use your hands.

Fill in the lamb mixture and close all the edges.

Bake in a preheated oven for 20-25 minutes at 200°F.
