300 to 400 gms Mashed Potatoes

1/2 tspn Cumin seeds
1/2 tspn Fennel seeds
1/4 tspn Turmeric powder

1/2 cup Besan (Chickpea flour)
3 tbspn Rice Flour

Prepare the potato mixture by combining mashed potatoes with salt, mustard seeds, cumin seeds, fennel seeds, turmeric powder, coriander powder, hing, chopped green chilly, chopped onion, coriander leaves, curry leaves, and a little oil.

In a separate bowl, prepare the batter by mixing besan, rice flour, salt, turmeric powder, and enough water to achieve a smooth consistency.

Heat the paniyaram pan and add a little oil to each cavity.

Scoop the potato mixture into the paniyaram pan cavities and cover with the batter.

Cook until golden brown on both sides, flipping as necessary.
