1 whole lemon
2-3 cloves garlic
2 cups cooked chickpeas
1/4 cup water
1/8 cup lemon juice
1/2 cup tahini paste
1/2 teaspoon sea salt
1/3 cup extra virgin olive oil
sweet paprika (pimenton)

Cut a whole lemon in half and juice it, straining out any bits.

Remove the skins from the cooked chickpeas while rinsing them; most skins will float to the top.

Add all ingredients into your food processor: garlic, chickpeas, water, lemon juice, tahini paste, sea salt, and extra virgin olive oil.

Put the lid on the food processor and process until smooth and fluffy.

In the Thermomix, process for one minute, gradually increasing the speed from 5 to 10.

Pop off the lid and check the consistency of the hummus.

Swirl the hummus around to create wells for a finishing drizzle of extra virgin olive oil.

Dust the top with sweet paprika (pimenton) for flavor.
